It’s almost Cinco De Mayo and while it has a rich history for Mexico, many Americans skip celebrating Mexico’s under-dog victory over France in the Battle of Pueblo in 1862. Instead, we go for Mexican inspired dishes and margaritas. Well, who am I to buck tradition?
In honor of the upcoming holiday, and in my truly late to the game fashion, here is a last minute, super simple recipe to serve at any celebrations you’ll be having in honor of Mexico being an awesome country!
The actual dip is a simple 3 ingredients! Then you add all the fixin’s you like and you have yourself a tasty little snack (or meal, if you’re like my family!)
Sour Cream – You want 16 oz of your favorite brand.
Cream Cheese – 8 oz. A block of the stuff. Let this sit out for about 30 minutes before you mix everything up.
Taco Seasoning – If you have a preferred brand, use it! You end up using about 1/2 to 2/3 a package in the dip.
It gets a bit tricky here with the instructions! Just Kidding! It’s so super simple.
Put the cream cheese, sour cream and about half a package of taco seasoning in a bowl, and use a mixer to mix it together until it’s smooth! Seriously, all done! If you didn’t let the cream cheese soften enough, you may get a mixture with a few lumps, but trust me, you won’t mind! Depending on the taco seasoning you use, and how much, the color of your dip might be anywhere from white with some flecks in it, to a pale orange. If you taste it and it needs more seasoning, it won’t hurt anything to add more!
If you like your spice, feel free to jazz it up with some extra chili powder or cayenne pepper! That is SO not my style, but it would add an extra bit of heat, if that’s what makes your taste buds jump for joy!
NOW! Here is the fun part! You get to jazz that dip up as much or as little as you like! If you want to just grab your chips and go to town on it, have a ball. Or, you can add some ground beef or grilled chicken (use the rest of the taco-seasoning packet to season the beef. mmmmmm), some cheese, chopped olives, avocado, lettuce, tomato, bell peppers, jalapenos, black beans, onions! The options at this point are absolutely limitless. Whatever stuff you enjoy on a taco, toss it in a bowl with a scoop of the Taco Dip and you’ve got yourself a mouthwatering vessel of YUMMY!
My favorite way to serve this is buffet style. Get everything prepped, then set it out so whoever is eating can customize their own bowl of dip. We eat this as a whole dinner in our house, because you can pack it full of so much good stuff that it fills you right up! I’ve also seen it used in a 7-layer dip type of set up. Instead of giving guests the choice, you layer everything into a bowl or dish, especially yummy if you’re using refried beans… mmmmm. This is such a versatile little dip that you can use it in SO many ways. It is great to jazz up actual tacos, or to serve with quesadillas instead of plain sour cream. Once you start to explore the possibilities, I bet you’ll find dozens of ways you love to eat this delicious Taco Dip!
